Pea, mint & marjoram soup recipe

Ingredients
220g diced onion
30g garlic, peeled and finely chopped
2.65 litres of water
40g fresh mint sprigs
20g fresh marjoram, picked and finely chopped
2.2kg of frozen peas
30g salt
A pinch of finely ground white pepper
To serve:
4 sprigs of finely chopped mint

Our beautiful pea, mint and marjoram soup is silky smooth and packed full of delicious spring flavours. It’s available on our May set menu, but you can also give it a go at home with our easy to follow recipe!

Method
  1. Bring the onion, garlic, mint, marjoram and water to the boil.
  2. Add the frozen peas immediately and return to the boil.
  3. Remove from the heat and puree in a blender until smooth, in batches if necessary.
  4. Pass through a fine sieve.
  5. Re-heat until piping hot.
  6. Garnish with a sprinkle of finely chopped mint and serve.
