Beetroot-Cured Chalkstream Trout

Served with horseradish sorbet, marinated beetroot, apple purée and fresh watercress. A beautiful balance of freshness and depth.

Main

Assiette of Lamb

Roast rack of lamb, potato rosti, glazed lamb sweetbreads, pressed lamb belly croquette, smoked aubergine caviar, baby fennel, lamb jus, shallot and garlic purée. A true celebration of craft and comfort.

Dessert

Raspberry & Ruby Chocolate Tart

Served with raspberry sorbet, Chambord Chantilly cream and fresh raspberry. Light, indulgent and made for sharing.
