That soufflé post you saw on socials this morning? Yes, we did say L’Escargot Soufflé. And yes, it is the 1st of April. We couldn’t resist. But here is the thing… once we started talking about soufflés, we simply couldn’t stop.

Because the real story is just as exciting.

Two Classics on the Menu, Always

At Brasserie Blanc, the soufflé is far more than a dish. It is a little miracle of air, heat and devotion, and we have two beloved classics on the menu that are always there for you.

In 2025 alone, we served over 300,000 soufflés. Each one crafted to order, each one watched carefully as it rises.

Begin with our Soufflé au Fromage. A twice baked soufflé served with a Coastal Cheddar sauce that is rich, savoury and deeply satisfying.

Then surrender to dessert with our Soufflé à la Pistache, light and fragrant, arriving alongside Jude’s chocolate ice cream in a pairing that is, quite simply, c’est magique.

Every Tuesday, we dedicate our kitchens to a special one of our extraordinary creations, serving our signature classics alongside something new and seasonal.

This Month’s Soufflé du Moment

Inspired by the seasons, our chefs create a Soufflé du Moment each month and right now it is our Caramel Soufflé, served until 21st April 2026.

Warm, golden and impossibly light. The April Fools joke may have been ours. This soufflé, however, is entirely serious.
