Brasserie Blanc Achieves Food Made Good 3-Star Rating for 2026
We are proud to announce that Brasserie Blanc has been awarded a Food Made Good 3-Star Rating for 2026 by the Sustainable Restaurant Association (SRA), the highest possible standard in the SRA’s globally recognised framework for responsible hospitality.
At Brasserie Blanc, we have always believed that excellent hospitality should do a little good along the way.
“We have a partnership between chef and gardener, a powerful creative force with strong values regarding sustainability.”
Raymond Blanc OBE – Chef Patron of Brasserie Blanc

Driven by that philosophy, this achievement means the world to us.
The SRA’s Food Made Good Standard is no box-ticking exercise. It is a rigorous, evidence-based assessment measured across 10 key impact areas, demanding real action and real results across three core pillars: Sourcing, Society and Environment. To earn three stars is to show, with hard proof, that sustainability sits at the very heart of everything we do.
Here is a look at how we earned it, and why doing hospitality the right way matters so much to our guests, our teams and our future.
How We Earned Our 3-Star Rating
Sourcing with Integrity
Great food begins with respect for the land, the sea and the people who nurture them. Our sourcing is built on provenance and transparency, choosing suppliers who protect the environment and uphold human rights.
Our senior chefs make twice-yearly visits to farms and fisheries. It is a genuine investment in building teams who understand and can speak to the story behind every ingredient on the plate.
We believe in “more plants, better meat.” We celebrate beautifully sourced animal products raised to the highest welfare standards, while continuously evolving our menus to champion plant-rich, seasonal dining.
Our seafood is sourced responsibly too, with a move to direct sourcing for key ingredients like our Loch Fyne mussels. Protecting fragile marine ecosystems is not an aspiration for us; it is a commitment.
Caring for Our Society
Hospitality is, at its heart, about people. We work hard to create a warm, safe and genuinely supportive environment where our teams feel valued and can build long, rewarding careers.
We look outward to our communities too. From hosting charity fundraising dinners to ensuring our brasseries are welcoming and accessible to every guest, we take our civic responsibility seriously.
We use the TenKites allergen system to make sure our guests can make safe, confident and informed choices about what they eat. Feeding people well means looking after them properly.
The SRA recognised our cascading approach to training as a model that embeds a genuine culture of care, rather than leaving wellbeing as an afterthought. Our menopause awareness training and team-led charitable giving were both singled out for praise.
Treading Lighter on the Environment
Reducing our environmental footprint is non-negotiable. We are constantly working to lower emissions, improve energy and water efficiency, and take a circular approach to waste.
Food waste is a battle we take very seriously. Around 40% of all food produced in the UK is lost or wasted, with 5% of that occurring within hospitality. Fighting waste is both an environmental and a social duty.
When energy costs rose sharply, we brought in specialists to install sub-meters and track consumption data across our sites. That external pressure became a long-term improvement programme.
Our recipe-level forecasting tool removes the guesswork from procurement entirely. Paired with a team reward scheme that makes energy saving a shared challenge, it keeps waste within a tight, disciplined tolerance.
What This Means for Our Guests
When you sit down at one of our tables, you can feel confident. The food on your plate has been sourced with care, the team serving you has been looked after, and we are doing our very best to protect the world around us.
That is what great hospitality looks like to us.
What Comes Next?
We see this rating as a foundation, not a finish line. We will be using it as a springboard for even more ambitious sustainability initiatives ahead.
To every member of the Brasserie Blanc family who brings these values to life every single day, merci beaucoup. And to you, our guests, thank you for your loyalty and support.
Let’s raise a glass to exceptional food, warm hospitality, and doing a little bit of good together. Santé!
