This Month’s Soufflé Special: Apricot & Almond

Every Tuesday at Brasserie Blanc, our kitchens are devoted to one of the great icons of French cuisine: the soufflé.

And this month? We are celebrating Apricot & Almond.

From 23rd June to 21st July, our chefs are crafting a Apricot & Almond Soufflé served with poached apricots and vanilla ice cream, showing off a vibrant celebration of seasonal ingredients, crafted with the classic technique that remains at the very heart of our kitchens.


What Makes a Great Soufflé?

A soufflé is, quite simply, one of the most demanding things a chef can make. There is no shortcuts, no second chances. The timing must be exact. The technique must be sure. Too long in the oven and the magic collapses. Too little and it never quite reaches its glorious peak.

In 2025 alone, we served 130,000 soufflés across Brasserie Blanc. Each one made to order. Each one watched carefully as it rises. Each one carried to your table at exactly the right moment. That is our patrimoine, our culinary heritage, and we are enormously proud of it.

A Closer Look

Our Apricot & Almond Soufflé takes two of summer’s most beloved flavours and lifts them into something beautifully, unexpectedly delicate.

Crisp and golden on the outside, impossibly light within, it carries all the sun-warmed sweetness of the apricot alongside the gentle, nutty depth of almond.

Alongside it, poached apricots and a vanilla ice cream bring a softness and warmth that makes the whole thing feel like a long, lazy afternoon in the French countryside. C’est magique.

Our Soufflé Specials are available every Tuesday, all day, across participating Brasserie Blanc restaurants. Whether you come for a long lunch or a relaxed evening dinner, you will find our chefs ready and waiting.

Alongside the seasonal Apricot & Almond Soufflé, our beloved classic cheese and pistachio soufflés remain on the menu too. There is something for every mood, every occasion.
