
This Month’s Soufflé Special: Raspberry
Every Tuesday at Brasserie Blanc, our kitchens are devoted to one of the great icons of French cuisine: the soufflé.
And this month? We are celebrating raspberry.
From 28th April to 19th May, our chefs are crafting a Raspberry Soufflé that is everything you could want from this time of year: light, vibrant and gently uplifting, with a bright, tangy sweetness that only perfectly ripened raspberries can bring.
What Makes a Great Soufflé?
A soufflé is, quite simply, one of the most demanding things a chef can make. There is no shortcuts, no second chances. The timing must be exact. The technique must be sure. Too long in the oven and the magic collapses. Too little and it never quite reaches its glorious peak.
In 2025 alone, we served 130,000 soufflés across Brasserie Blanc. Each one made to order. Each one watched carefully as it rises. Each one carried to your table at exactly the right moment. That is our patrimoine, our culinary heritage, and we are enormously proud of it.

Raspberry is one of the true joys of the French dessert repertoire. Sun ripened fruit, a natural sharpness and just enough sweetness to keep everything beautifully in balance.
Our Raspberry Soufflé takes that lively character and lifts it, quite literally, into something cloud like and delicate. The fresh, fragrant brightness of raspberry is carried inside a soufflé that is crisp on the outside, yielding and airy within. It is refreshing yet indulgent. Elegant without ever feeling heavy.

Our Soufflé Specials are available every Tuesday, all day, across participating Brasserie Blanc restaurants. Whether you come for a long lunch or a relaxed evening dinner, you will find our chefs ready and waiting.
Alongside the seasonal Raspberry Soufflé, our beloved classic cheese and pistachio soufflés remain on the menu too. There is something for every mood, every occasion.
