This Month’s Soufflé Special: Chocolate
Every Tuesday at Brasserie Blanc, our kitchens are devoted to one of the great icons of French cuisine: our Signature Soufflé.
And this month? An old friend is coming home. Our Chocolate Soufflé is back.
It first stole the show as our Soufflé du Moment at the start of the year, and quite simply, it was too good to keep away for long. From 27th October to 17th November, our chefs are crafting a Chocolate Soufflé served with dark chocolate sauce and chocolate ice cream, a vibrant celebration of seasonal ingredients, crafted with the classic technique that remains at the very heart of our kitchens.
What Makes a Great Soufflé?
A soufflé is, quite simply, one of the most demanding things a chef can make. There are no shortcuts, no second chances. The timing must be exact. The technique must be sure. Too long in the oven and the magic collapses. Too little and it never quite reaches its glorious peak.
In 2025 alone, we served 130,000 Signature Soufflés across Brasserie Blanc. Each one made to order. Each one watched carefully as it rises. Each one carried to your table at exactly the right moment. That is our patrimoine, our culinary heritage, and we are enormously proud of it.

Our Chocolate Soufflé takes one of the most loved flavours in the world and lifts it into something beautifully, unexpectedly light.
Crisp and golden on the outside, impossibly airy within, it is pure chocolate comfort in every spoonful, yet light enough that you will always have room for it.
Alongside it, a glossy dark chocolate sauce and a scoop of chocolate ice cream bring depth and a lovely cool contrast, turning each mouthful into a little play of warm and cold. C’est magique.

Our Soufflé Specials are available every Tuesday, all day, across participating Brasserie Blanc restaurants. Whether you come for a long lunch or a relaxed evening dinner, you will find our chefs ready and waiting.
Alongside the returning Chocolate Soufflé, our beloved classic cheese and pistachio Signature Soufflés remain on the menu too. There is something for every mood, every occasion.
